So, last Monday started with me waking to a downpour complete with thunder and lightning. This put a damper on my plans to finally make a trip to the grocery store for some much needed groceries. Needless to say, I decided not to venture out into the cold downpour for food. That meant I would be scrounging for dinner. This turned out to be a good thing. I played with a few things and found a new dinner menu to add to my recipes!

Out of the rainy day, Spaghetti Zest was born! I had some spaghetti in the pantry and was trying to figure out what to do with it without resorting to the traditional sauce. I remembered seeing several pins on Pinterest that called for olive oil and parmesan cheese. I don’t have any olive oil at the moment though. So, I started rooting around for something else and found the Zesty Italian dressing in my refrigerator – the fat free variety at that.  It seemed like it could work.

I took a note from my memory and mixed parmesan cheese, garlic, oregano, and bread crumbs (crushed up croutons in this case) to a small container to be shaken up really well.

I cooked my spaghetti, which happened to be whole wheat, making it a healthier choice than the traditional spaghetti. And for once, I didn’t cook too much. I cooked the perfect amount for just me!

I added the parmesan mixture and dressing to the spaghetti and started to eat my dinner. I was pleasantly surprised! This will be a repeat meal in the future.
