Before we get to today’s recipe, I have to preface it by saying I eat more than chicken. When I put together today’s post, I forgot that I just covered a healthy chicken and veggies recipe last week. This one is much easier and very different. This one features one of my favorite kitchen gadgets – the crockpot – and results in extra meals for your freezer. We’ll be discussing freezer meals in a future post, but know that this recipe yields more food than you’ll need for one person. It’s on purpose.
P.S. If you don’t own a crockpot with a timer, I highly recommend you invest in one. I made this meal overnight and the crockpot kept it warm for me until I portioned it out. I recommend the exact crockpot that I own and love. It even comes with an easy carry option for transporting food to new locations!
Ingredients:
Chicken breasts (2-3)
Frozen vegetables of choice
1. Put your vegetables into the crockpot. I used about half a bag but you can vary this depending on how many vegetables you want. I used green beans and carrots because they were in my freezer and needed to be used up.
2. Place your chicken breasts on top. My chicken breasts were thawed in the refrigerator for this recipe. I only did two but you could easily fit three in at a time.
3. Pour Zesty Italian Dressing over chicken breasts and vegetables. I used about half of the bottle. You’ll need a little more if you do three breasts.
4. Cook in the crockpot for 7 hours on low (5 hours on high). As I mentioned above, I started mine before going to bed and it was done in the morning.
5. Cut each breast in half. Serve half a breast with a generous helping of vegetables.
6. Freeze leftovers in individual containers with half a chicken breast and a scoop of vegetables. Defrost and reheat in the microwave to enjoy. (This is a much healthier alternative to buying frozen dinners!)
Side note: I don’t have a nicely plated picture because all of mine made it to the freezer. They make a quick (and easy) dinner for a busy (or lazy) night!
