For some reason, I’ve been in a Valentine mood even though I’m spending it alone. I’ve been enjoying the reds, pinks, and hearts that I’m seeing everywhere – including my own apartment. So, I decided to give my pizza recipe a fun twist in honor of the holiday! You can really take this tutorial and create any shape you want, but I chose hearts since Valentine’s Day is so close. (Plus I was really close to ordering a heart shaped pizza when I saw it online. I no longer have that urge…)
You’re going to start by preheating your oven to 350 degrees. Then, you’re going to get two whole wheat pitas and your cookie cutter of choice. (I recommend a metal cookie cutter – I don’t think a plastic one would cut through the pita very well.) Use the cookie cutter to cut out shapes from the pita.
Save your scraps and put them in a bag or container. Then, enjoy them as a snack with hummus on another day! No need to waste good pita bread. I suggested two pitas because you won’t end up with a whole pita after you cut out your hearts. Next, lay the hearts on a foil lined baking sheet. (The foil makes for easy clean up!)
Spread a little sauce on each heart. I used the Trader Joe’s pizza sauce but you could really use any tomato based sauce that you have on hand. (Or you could get creative and try it with a different kind of sauce even!)
Next, add your toppings to the mini pizzas. I just used mozzarella cheese but you could easily add any other pizza favorites. You might have to cut them down to accommodate the small size of your pizzas.
Bake your pizzas in the oven for 10 minutes at 350 degrees. Then, take them out and enjoy! These make a great meal for one or could even be used as appetizers at a party.
